We’ve been working around the clock on our new Chocolatier Cupcakes for Valentine’s day. All of the new flavors make their debut January 29th, 2015, and boy are we excited for you to sink your teeth into all of them! One of our favorite is the Chocolate-Dipped Strawberry, featuring Woodblock Chocolate Co. from Portland, Oregon. Woodblock is a small bean-to-bar chocolate producer who create UNBELIEVABLY true-tasting chocolate. Husband and wife team Jessica and Charley Wheelock have spent many years perfecting their art of bean-to-bar chocolate.
They sent us a package in the mail mid-December, chock full of their faves. After carefully tasting ALL of them, we decided to go with the 70% cajamarca from Peru. It’s absolutely fantastic, with notes of raisins and plums made possible from the mighty Criollo beans from the mountains of the Morropon province of Peru.
Keeping in the spirit of Valentine’s Day, we decided to take a classic dessert, the chocolate-dipped strawberry, and make into a cupcake worthy enough to top with a beautiful buttercream which has the 70% Peru chocolate in it.
We take our award-winning chocolate cupcake, core it out, and fill it with fresh, local strawberry compote. Then we swirl it with Woodblock Chocolate buttercream. It’s sweet, rich, and tangy.
It’s magically special, and what makes it so perfect is this unique and wonderful chocolate!
